Title: Burnt Creams

Yield: 6 Servings

2 1/2cWhipping Cream
4 Egg Yolks
1tbGranulated Sugar, (+ Extra
  For Topping)
1/2tsVanilla Extract

Heat the cream in a double saucepan. Mix the egg yolks, sugar and vanilla and add to the cream off the the heat. Return to the heat and cook until the custard coats the back of a spoon. Do not let it boil. Pour the custard into 6 individual ramekins or souffle dishes, filling nearly to the brim. Stand the ramekins in a shallow baking dish. Pour hot water to come 2/3's up the sides of the ramekins. Put the baking dish in a preheated oven at 250 F for 30 to 40 mins until the custard is just set. Remove from the oven and when quite cold cover each custard with a thin even layer of granulated sugar. Brown uniformly under a hot broiler. Cool before serving. Serves 6.

NOTES : These are very rich. They are good served with a soft fruit like strawberries or raspberries.
